Kimchi is a traditional Korean dish of fermented vegetables, typically napa cabbage and mooli, seasoned with chilli, garlic, and ginger. Naturally probiotic, it offers a tangy, complex flavour and is enjoyed on its own or in dishes like kimchi stew and fried rice.
Our recipe is rooted in Chungnam, Korea, bringing the taste of MiJi’s hometown to you. We use only premium ingredients – Trapani sea salt, gochugaru, mineral water, and fresh produce – with no added sugars, powders, or preservatives. Our kimchi is always unpasteurised, and we take no shortcuts.
We also offer catering and wholesale for events, restaurants, and retail.
OKTO is a small-batch kimchi producer based in Hackney, creating vegan, handmade, premium kimchi.
The name OKTO is inspired by Korean folklore’s moon rabbit, a figure said to create elixirs and rice cakes for others. It reflects our ethos: making nourishing food with patience, honesty, and purpose.
OKTO is led by MiJi, a South Korean founder dedicated to preserving authentic, traditional kimchi-making, and Alex, a London-born co-founder overseeing logistics, branding, and accounts.
